An Easy Ranch chicken dinner recipe all in one pan
What you need for this recipe (for 2):
2 large chicken breasts
Olive oil
vegetable of your choice in this recipe I used baby carrots but i have also used string beans
Ranch seasoning ( Hidden Valley Ranch is the best)
4 or 5 potatoes of your choice
garlic powder
Onion powder
salt
pepper
1 large sheet pan
2 medium sized bowls
What to do:
1. Line your large baking sheet with foil and drizzle some olive oil on to it. Also, preheat over to 350 degrees
2. Cut your potatoes into cubes
3. In a medium bowl, drizzle a tablespoon of olive oil, a tsp of garlic powder, 1tsp of onion powder, a pinch of the ranch seasoning and a tsp of both salt and pepper. add the potatoes in to the medium bowl and fold with your hands or a big spoon if you prefer
4. Add the potatoes on to a quarter of the baking sheet and place in over for 10 to 15 min
5. While the potatoes are in the oven, take your baby carrots and toss them in a tsp each of salt and pepper and a pinch of the ranch seasoning and a drizzle of the olive oil.
6. Take the potatoes back out of the over and place the carrots on the second quarter of the baking sheet. Place the pan back in the oven for another 10-15 min. ( stir the potatoes and carrots)
6. While the potatoes and are cooking, butterfly your chicken cutlets, creating two cutlets from each one.
7. place your chicken in a new medium sized bowel (you can put it with the same bowl to save a dish if you'd like)
8. Combine 2 tbsp of olive oil and the rest of the ranch season packet. Rub on the chicken and let it rest for about 2 minutes in the bowl
9. Take out the pan containing the potatoes and carrots and place the pieces of chicken on the last remaining quarter of the pan. you want to give the potatoes and carrots a stir when adding the chicken to the pan.
10. Bake all together for 30-35 minutes.
